Speck and Arugula Salad
Preparation of the salad

1. Distribute the arugula on serving plate and add Speck slices.

2. Top with Parmigiano Reggiano cheese shavings, mushrooms, walnuts.

Preparation of the dressing

3. Combine all ingredients in a mason jar. Seal and shake to emulsify.

4. Drizzle dressing on top.
Ingredients
(Serves 4)

For the salad:

3.5 oz arugula
1lb
sliced Speck
Parmigiano Reggiano shavings
10 thinly sliced cremini mushrooms
1/3 cup walnuts

For the dressing:

1 tbsp finely chopped mixed herbs
(rosemary, sage, thyme )
1 ½ tbsp
Paradiso Extra virgin olive oil
2 tsp Capriccio Balsamic Vinegar
