Taleggio is a cheese with very old origins, possibly dating as far back as the 10th century.
It is named for the Val Taleggio, in the province of Bergamo (Lombardy), from which it
comes. In order to preserve the excess milk, the inhabitants of this valley began to
produce this cheese which was aged in "caves".

Its rind is thin, of soft consistence and its color is natural rose, with presence of
characteristic grey and green light sage color mould.

It is characteristically aromatic yet mild in flavor and features tangy, meaty notes with a
fruity finish. The texture of this cheese is moist-to-oozy with a very pleasant
melt-in-your-mouth feel.

The combination of the soft texture, pungent aroma, and buttery flavors has proven to be
addictive, especially when spread on fresh crusty bread.
